I believe the reason we only get a 1900Kg trailer is not the trailer itself but the weight bearing capacity of the tyres. For the record I have a single axle trailer and pay careful attention to the tyre pressure to ensure it is at 50psi.

when were you hoping to go for a sail. I'm in Perth, (Mullaloo) and have a 26x. Depending on availability and of course weather conditions I could tee up a trial for you.

Go with a roll on roll off. You don't need to dismantle (or angle grind) any part of the trailer. It also means you are ready to tow away once the boat arrives rather than having to drag the boat out on it's axles (wheels need to be removed for height clearance).
