I had no problem restoring my grey stripe to black using WM's color restorer. Followed by a coat of wax and it looks beautiful.
Pink Sky is in a slip in the SoCal sunshine, so I think she has life pretty hard. I make a practice of waxing once a year and the finish stays nice.

You really want to motor at 10mph? I find that when motoring I like to either stay under hull speed, about 5-6mph, or get well enough over hull speed that I'm on a clean plane, about 12mph. WM is closing out S1s
Just an idea for you... WM is starting to carry the RayMarine S5 and so they'll cut a deal on the S1. I just bought one for $1085. I'm a little undecided on whether or not I'll return it and wait for the <$600 Mac specific one.

Paddling lessons
I'd like to suggest that you get paddling lessons or read a good book on paddling. The sport is much more enjoyable once you understand how to paddle with "torso rotation instead of arm flagellation".
