Here's some first hand experience from the Adriatic. I believe it is similar to the conditions in Greece.
I can confirm the above post - due mostly to my inexperience, we experienced some major slamming, but with reduced speed, it is bearable. Still, expect a fairly wild ride. The flat hull does not help! Sailing, from my limited experience, will depend on the area - in open areas, where waves travel over distance and have chance to build up - look out. When you have enough wind to sail nicely, you will most likely also get the waves that make it unpalatable.
It seems that the Mac's weight is a downside in those situations, so I would suggest filling up the balast and bringing a few hefty friends. And, very importantly, bring waterproof clothes, as there will likely be a lot of spray and waves breaking over the deck...My plan is to get a genoa and try to catch the lighter winds, when the surface is smoother.

in my opinion the mac is a good boat for med .i sail in southern italy ( tirrenic sea) and my mac is perfect for it.
0- 4 sea; no more than 20 -22 kn wind.this is the range for a safety and funny sail with a mac.
More wind....could be safe anyway but not funny.
on the other hand.........meltemi is a wery strong wind...if with a good path, well....wind and waves could be stronger than in tirrenian see.

bad weather sailing
I do a lot of sailing in Lake Michigan. some times the winds are around 3-5 kt with smooth water, and in 30 minutes there will be 15-25 kts with 8 footers. waves will be pretty close together. Like to be out there when the Admiral isn't on board. Boat seems to ride better than anything smaller than 26'. Only time I get wet is when we decide that we need a smaller sail. Then, only when the crew decides to turn the boat so we hit the approacing wave so I'll get wet.
