Doesn’t the answer depend on the look you want?
While at it, you may wish to add a range or a larger sink, or something else?
The mods section may give you ideas?

Hi All!
Just an up date on our galley mod….
While we originally planned on using our Twin burner propane stove we ditched that and went with a table top single burner induction cook too.
No flames! Simple to use! Heats VERY quickly! Easy to store! No propane bottles required! Easy to clean too! Side benefit is that the induction cooktop DOESN’ T radiate any downward heat! No tile required! Even after cooking a pot of spaghetti the induction cooktop cools almost immediately! VERY HAPPY with this choice!
Also keeps us in compliance with many marinas now having a “no open flames
“ policy of any sort.
While our current operations have allowed us to use a marina slip with shore power we will be adding an inverter soon to allow us to cook on the hook should we chose. A small generator is also in the works as well as are 100watts of solar cells.
(If anyone wants a surplus Mac26X galley sink we still have the one we removed.)
We have REALLY enjoyed our modified galley!

I decided to retile using white square subway tiles. The new top looks great!

Did you finish this project? I need to retile due to the tiles delaminating and was wondering how difficult it was.

I chipped them out with a chisel and hammer. It was messy but not hard. I glued new tiles in, then grouted them. You can get square tiles from any tile shop. Sorry, no pics.

Maybe this is too late for this thread, but if anyone is curious, the attached photo reveals what’s underneath the grey tiles on the 26X. I used a chisel and hammer to chip out the tiles I needed to remove. Not too difficult but it was a chore that just needed to be done to replace the wash basin and galley countertop. There’s a heavy duty goo-like adhesive holding the tiles down; a heat gun might have loosened them but I was just removing them and didn’t care whether they broke. Its a bit messy with tile chips breaking so be prepared to vacuum up the demo’d tiles.
