After we see the pictures I requested (looking up at the head from underneath the boom, showing luff and leech), we can assess the sail shape. Until then, there is little point in giving you advice about what to do with the halyard/cunningham, vang, outhaul, mainsheet or backstay.
I would be happily surprised to find the shape isn't baggy. If the sails were dirty and stretched out of shape and subsequently reconditioned by coating with resin, they are probably clean and white, but still stretched out of shape.
