My nephew turned us on to the Aeropress travel coffee maker and we can't live without it. It won't some sort of design contest.

Might just be the sea air, but we swear it makes better espresso than our fancy unit at home. We have 2 of these now; one dedicated for the boat and the other when we travel.
Just found out they now make a "Go" version that packs even smaller... Might have to get one of those.

I spent many hours figuring out the best cooking appliances. What I currently like the most is:
Insignia™ - Single-Zone Induction Cooktop model NS-IC1ZBK0, got on sale for $37
Stansport Heavy Duty - Stainless Steel Clad Cook Set (369), perfectly compact
Instant Pot Duo Mini 3-Quart (take sometimes)
Farberware 2-4-Cup Percolator, Stainless Steel, FCP240, got used but I would spend the $60 for another one
Magma Products, Original Size Marine Kettle Gas Grill, A10-205
Backup when we are off the grid is a Origo 2000 alcohol stove that came with the

Tom, I like your list of favorite items. I also have a single burner induction set up. The Stansport cooking set would be ideal.
However the bottom is aluminum for " even cooking ". Don't think it will work for my induction stove. If it does on yours let us know. Best of luck

OVEREASY When cooking your rice try bringing your water to a boil add rice bring to a boil again then remove from heat, cover pot with lid, wrap in towel and let it finish cooking by itself. Saves your 20 min. of simmering.

Especially if we’re running inverter off of battery to run the induction cooktop!

A recent acquisition that I have yet to try is this mini waffle-maker I came across at a thrift store. Label says it draws 350 watts, well within my inverter's capacity, and shouldn't draw my two-battery system down too badly:
Not available for a photo (on the boat) is a mini crock-pot that draws about 150 amps. I will put a serving of pulled pork, beans, cut-up quesadilla, etc. in just before I start my sail, plug it in, and put it in the sink so it doesn't fall about the cabin. After an hour or so of sailing my meal is nice and warm.

Your onto something with the mini crockpot too!
That would be especially useful when we finally get out cruising the ICW for extended periods…my Admiral makes a great stew along with a host of other crockpot type meals… would just have to scale to recipes accordingly…. OR …. She could make in advance and use the mini crockpot to reheat…. Great Idea!
