Success!! I downloaded the new version of InqWaterLevel and now I am able to get readings that would easily account for the space between full and empty for the water bladder. I put the device in the case and hooked it up to a 12V battery and it works fine too. Next step is to get some marine wire and install it in the boat. I'll send some pictures when it is installed. Thank you for letting me know. If this didn't get it, my amateur status in this field was drawing a blank. I'm still trying to wrap my head around how the limit I had in the software was only letting you get up to 400. But... like the saying goes... its better to be lucky than good. 8)

Success! The sensor is installed and working. I used 2 part epoxy and glued the case to the underside of the v-berth hatch opening.

Then I ran the wire along the top to the bulkhead and down to the water line. The wire then continues to the panel where it has its own switch.

I used a 4L jug to measure the water going into the tank and recorded the data every 12 litres. Here is the table:
