Any comments/observations about the West Marine 3 layer floating thingy?

I just bought this, a 6' by 6' inflatable dock

which is sort of (but not quite) what you are talking about. I haven't tried it yet, but I look forward to it. My friends and I are no spring chickens, and it should be a lot easier to step off the boat onto this, and then into the water, than by using the ladder -- especially climbing back.

Yeah, I have a 2-ply floating thingy, which worked fine when the kids were smaller, but they're both over 5' 10' and I'm thinking the "3-ply" will provide more support. Nice that it advertises it has plastic gromments, making it easier to secure to the boats cleats. But advertisers have been k now to "stretch the truth" - something I am reminded of EVERY time I raise my mast prior to splashing my X. 8)

I see the "floating thingies" in use mostly by power boaters. Kids love to cavort on them and they appear to be perfect for wet, splashy fun. Naturally, the thicker these are, the more stability and flotation they provide, but the more bulky. You might want to ask around among those who have bought.

Reviews for the product you mention are mixed. People like that they can be handled by one person. Overall, they appear to be not that great for adults, and one person complained of light scrapes.
