Hi,
I've just acquired my first Mac 26M (2005).
want to remove the top of the factory-supplied galley and replace it with a corian bench top.
I expected the existing top to be attached with angle brackets but that does not appear to be the case (?). Any tips?
Also, how do I remove the whole galley from it's sliding mechanism.

Welcome to the forum.
Have you done a search? There are MANY Galley mods in this section of the forum as well as the Mods section. That Mods section is categorized and you can drill down and find Galley mods. They only have cursory information though. The nuts and bolts and the sagas of the builds are typically here in this Repairs and Modifications section. There have been some complete rebuild/replacements of the sliding M galley and I believe I've recently seen someone did a Corian countertop replacement or maybe it was actually Quartz.
To get to Mods section... its a little convoluted... hit the logo above and it will take you to the "Main" site, you'll see a Mods on the menu.
After you have some ideas of where/how you want to proceed, this area is a great place for specific questions.
As far as removing... its been ten years since I punted my sliding Galley... but I recall it was just several bolts on rollers and screws holding the track down. I don't recall the bolts being that hard to find that hold it down to the track.

There are three slides under the galley. Two are in back one one on front right (facing galley). Open the door on the right side and you'll be able to reach inside and undo the nyloc nuts that hold the galley on the slides.
